Kale and Quinoa Salad
• 1 cup quinoa
• 3 kale leaves
• 1 medium carrot – shredded
• 1 medium onion
• Pink Salt to taste
• Olive oil
• Black pepper
• Coconut oil
Cook the quinoa in boiling water, just like cooking white rice. One cup of quinoa and two cups of water.
In a separate skillet, add some coconut oil and after it melts throw the onions and shredded carrot. Mix the ingredients for about 2-4 minutes and then place the kale into slices in the skillet. Make sure you keep mixing the ingredients together.
When the kale wilts the salad is ready. I like to place the quinoa as the base, and put the kale and carrot mixture on top.
Now we can add some seasoning like pink salt, black pepper and olive oil to taste. The finishing touch is the goji berries on top. Goji berries are a little sweet, so if you like mixing salty foods with sweet this will taste really good for you
Now you are ready to enjoy! I like to serve it hot!
