Who doesn’t love a hot muffin straight from the oven? I sure do, and I have an easy to make recipe for a tasty and healthy muffin!
- 1/4 cup coconut flour
- 1/4 cup liquid coconut oil
- 2 eggs
- 1/4 tsp. baking soda
- 1 big banana smashed
- 1 small strawberry (optional)
1) Preheat the oven to 100 Celsius (212 Fahrenheit). Line 4 muffin cups with liners. Mix together the coconut flour and oil until smooth, then beat in the eggs until smooth. Add the remaining ingredients and stir well.
2) Divide between the prepared cups and place a small strawberry on top (optional) and bake about 20 minutes at 100 Celsius (212 Fahrenheit). After 20 minutes increase the temperature to 150 Celsius (302 Fahrenheit) and bake for another 20 minutes until they become tanned on top or until a toothpick comes out clean.
The muffin will come out tanned, soft and moist!
